Two Types of Quiche



 



The other day we had some friends over for dinner and I decided to make a couple of quiche.  I like quiche because they are quick to make and you and use almost any type of filling you have on hand.  I wanted to make one vegetarian and one meat option so I went with spinach and feta and ham and broccoli.  You can use anything you have in the fridge.  Mix two types cheeses together, add caramelized onion, sundried tomatoes, or asparagus, whatever you have.  Just stick to the basic quantities of egg and milk and try something new!



OK, big confession here.  I have to admit these pie shells were not homemade! I know, I know. I had them in the freezer and thought I would just use them and that would be that. Done.  I figure it is all part of the journey.   The reality is that making change is hard and it is unrealistic to expect people to throw out everything in their pantry and start fresh. Although some of us might do that, most of us need to take slightly smaller steps.   

Needless to say that was the last time I will be buying those shells and unless I happen to find some in the freezer section that have no GMOs or other "non-real" ingredients I'll be making them myself.  I'll be sure post about my attempts at pastry making!




Spinach and Feta Quiche











 
Ingredients
  • ½ onion finely chopped
  • 1 clove garlic minced
  • 4 organic eggs
  • ½ Cup or more of crumbled feta cheese
  • 2 Cups Organic baby spinach
  • ½ Cup of organic milk or cream ( I find half of each works really well)
  • 10-12 small basil leaves roughly chopped
  • Coconut oil or olive oil
  • 1 Pie Shell
 
Directions
  1. Preheat over to 400 F.
  2. Sauté onion and garlic in coconut oil (or olive) until translucent and remove from heat.
  3. Steam spinach until it turns a nice bright green, about 2 minutes. Remove from heat and rinse in cold water to stop it form cooking further.
  4. In a small bowl whisk together the eggs and milk/cream.
  5. Once the pie shell is ready place the onion and garlic mix on bottom of the shell followed by the cheese, the spinach the basil and egg mixture. Finally top with the rest of the cheese.
  6. Pop it in the oven and bake at 400 F for about 40 minutes.

Can be eaten warm or cold. I serve with a big green salad.








Ham and Broccoli Quiche










 
Ingredients
  • ½ onion finely chopped
  • 1 clove garlic minced
  • 1 Cup broccoli flowerets
  • ½ Cup or more of grated parmesan or other hard cheese
  • 4 organic eggs
  • ½ Cup of organic milk or cream ( I find half of each works really well)
  • 1 Cup or more of diced cooked ham
  • Coconut oil or olive oil
  • 1 Pie Shell


Directions
  1. Preheat over to 400 F.
  2. Sauté onion and garlic in coconut oil (or olive) until translucent and remove from heat.
  3. Steam broccoli until it turns a nice bright green, about 2 minutes. Remove from heat and rinse in cold water to stop it form cooking further.
